Food competitions have been held at the fair for more than a decade. This year, the winner of the “Best Taste - Hearty” category was fried gumbo balls with seafood, made by Gourmet Royal. The gumbo balls are made using a special family recipe that includes Persian Gulf crab and delicious an Debouillet sausage.

They are spicy pastries filled with duck bacon, roasted sweetcorn, and creamy cream cheese.

That year, the William Family Concession offered their Fried Toffee Coffee Crunch Cake, which was made with cookie doughnuts and English caramel. Candies fried with panko and biscuit crumbs. At the Texas State Fair, you'll also find delicious temptations like fried chewing gum (made from chewing gum-flavored marshmallows), fried jelly beans, and if you like, sweet fried chocolate. Cad-bury cream eggs.
